Black Bean Portabella Veggie Burger
(Yield- 32 burgers)
1 burger= 180 kcals, 11.5g protein, 22g carbohydrate, 6g fiber, 5.5g fat (2.4g saturated)
Ingredients:
- 8 cups canned black beans, rinsed
- 8 cups portabella mushrooms, gills removed and cubed into small pieces
- 2 cup red onion, minced
- 8 tbsp minced garlic
- 1 1/3 cup fresh broccoli, minced
- 1 1/3 cup carrots, minced
- 1 1/3 cup red bell pepper, minced
- 4 tbsp Worcestershire
- 4 tbsp steak seasoning
- 1 1/3 cup tomato paste
- 12 large eggs, beaten
- 2 cup Panko
- 3 cup grated Romano cheese
Instructions:
- In a large bowl mash the black beans with a masher.
- Add the mushrooms, red onion, garlic, broccoli, carrots, red bell pepper, Worcestershire and steak seasoning and mix together evenly.
- Mix in the tomato paste, eggs, Panko, and Romano cheese until thoroughly combined.
- Form patties using ½ cup of the mixture.
- Bake at 350⁰F for 15-20 minutes.
